Ingredients
- 48 RITZ Crackers
- 8 pepper Jack cheese slices (about 6 oz.), each cut into 6 pieces
- ¼ fresh mango, cut into 24 pieces
- 24 baby arugula leaves
Preparation
- Heat oven to 350°F.
- Place crackers, top sides down, in single layer on parchment-covered baking sheet; top with cheese.
- Bake 2 min. or until cheese is melted.
- Top 24 crackers with mangos and arugula; cover with remaining crackers, cheese sides down, to make 24 sandwiches.
