
French Onion Soup Toppers

Ingredients
- 2 Tbsp. butter
- 2 sweet onions, sliced, separated into rings
- ½ cup light beer
- 36 RITZ Garlic Butter Crackers
- 6 Swiss cheese slices (0.75 oz.), each cut into 6 pieces
- 12 slices deli roast beef (3/4 lb.), each cut into 3 pieces
- 1 tsp. finely chopped fresh parsley
Preparation
- Melt butter in large skillet on medium heat. Add onions; cook 20 to 25 min. or until golden brown, stirring frequently.
- Heat oven to 350°F. Add beer to onions; stir. Cook 5 to 8 min. or until beer is cooked off, stirring frequently. Remove from heat.
- Place crackers in single layer on baking sheet; top with onion mixture and cheese.
- Bake 3 min. or until cheese is melted.
- Top with meat and parsley.

The onions can be cooked ahead of time. Cool, then refrigerate up to 2 days. When ready to use, microwave on HIGH 1 min. or until heated through, stirring after 30 sec. - Variation
