Eat-Your-Veggies Buffalo Dip

If you enjoy buffalo cauliflower, you will love this creamy buffalo dip with fresh cauliflower and broccoli slaw for a vegetarian version of the popular party dip.

ServingsMakes 16 servings, 2 Tbsp. dip and 16 WHEAT THINS each.
  • ½ cup small cauliflower florets, finely chopped
  • 1 tub (8 oz.) whipped cream cheese spread
  • 2 Tbsp. Buffalo wing sauce
  • ½ cup broccoli slaw, chopped
  • ¾ cup shredded reduced-fat mozzarella cheese, divided
  • WHEAT THINS Original Snacks
  • Microwave cauliflower and 1/4 cup water in microwaveable bowl on HIGH 2 to 2-1/2 min. or until cauliflower is tender; drain well. Cool slightly.
  • Heat oven to 350°F. Mix cream cheese spread and wing sauce in medium bowl until blended. Add cauliflower, broccoli slaw and 1/2 cup mozzarella; mix well.
  • Spoon into baking dish or pie plate sprayed with cooking spray; top with remaining mozzarella.
  • Bake 15 to 18 min. or until dip is heated through.
  • Serve with the WHEAT THINS.

    Omit the oven baking step. Serve the dip immediately after mixing the ingredients together.

    This dip makes a great addition to a school lunch. Spoon 2 Tbsp. of the cold dip into small container with lid, then pack it in an insulated lunch box. Serve with carrot and celery sticks in addition to the WHEAT THINS.
