Crusted Chicken in Salsa Verde

  • 30 RITZ Crackers, finely crushed (about 1-1/4 cups)
  • ¼ cup mayonnaise
  • 1¼ cups green salsa
  • 10 small boneless skinless chicken breast halves (2-1/2 lb.)
  • ¾ cup shredded Monterey Jack cheese
  • ¼ cup chopped fresh cilantro
  • Heat oven to 375ºF.
  • Mix cracker crumbs and mayonnaise.
  • Spread salsa onto bottom of 13x9-inch baking dish. Top with chicken; spread with crumb mixture.
  • Bake 20 min. Top with cheese; bake 5 min. or until melted. Sprinkle with cilantro.

  • Substitute
    Prepare using your favorite red salsa.
  • Make Ahead
    Spread salsa onto bottom of baking dish; top with chicken. Refrigerate up to 4 hours. Spread with mayonnaise mixture and continue as directed.
