Crispy Santa Fe Chicken Recipe


  • 4 small boneless skinless chicken breast halves (1 lb.)
  • 1 egg, beaten
  • 12 PREMIUM Saltine Crackers, finely crushed (about 1/2 cup)
  • 2 Tbsp. butter, melted
  • 1 cup salsa
  • 1 cup shredded Mexican cheese blend


  • Heat  oven to 425ºF.
  • Dip  chicken in egg then in cracker crumbs, turning to evenly coat both sides of each piece.
  • Place  in 13x9-inch baking dish sprayed with cooking spray; drizzle with butter.
  • Bake  20 min. or until chicken is done (165ºF). Top with salsa and cheese; bake 5 min. or until cheese is melted.
