
Corned Beef Hash Topper
Corned beef may be a traditional St. Patrick's Day entree, but when you use it in these savory appetizer bites you'll have everyone wanting a taste to celebrate the holiday!

Ingredients
- 5 oz. new potatoes
- 1 Tbsp. butter
- ½ cup slivered onions
- ½ cup chopped green peppers
- ¼ tsp. black pepper
- 24 TRISCUIT Crackers
- 12 slices corned beef (1/4 lb.), cut in half
- 1 Tbsp. Dijon mustard-mayonnaise blend
Preparation
- Place potatoes in single layer on microwaveable plate. Microwave on HIGH 1-1/2 min. or until potatoes are slightly softened; cool completely.
- Chop potatoes; set aside. Melt butter in medium skillet on medium-high heat. Add onions and green peppers; cook and stir 1 to 2 min. or until crisp-tender.
- Add potatoes and black pepper; mix lightly. Cook 3 min. or until potatoes are lightly browned, stirring frequently.
- Top crackers with meat, potato mixture and mustard-mayonnaise blend just before serving.
