Corned Beef Hash Topper

Corned beef may be a traditional St. Patrick's Day entree, but when you use it in these savory appetizer bites you'll have everyone wanting a taste to celebrate the holiday!

ServingsMakes 12 servings, 2 topped crackers each.
  • 5 oz. new potatoes
  • 1 Tbsp. butter
  • ½ cup slivered onions
  • ½ cup chopped green peppers
  • ¼ tsp. black pepper
  • 24 TRISCUIT Crackers
  • 12 slices corned beef (1/4 lb.), cut in half
  • 1 Tbsp. Dijon mustard-mayonnaise blend
  • Place potatoes in single layer on microwaveable plate.  Microwave on HIGH 1-1/2 min. or until potatoes are slightly softened; cool completely.
  • Chop potatoes; set aside. Melt butter in medium skillet on medium-high heat. Add onions and green peppers; cook and stir 1 to 2 min. or until crisp-tender.
  • Add potatoes and black pepper; mix lightly. Cook 3 min. or until potatoes are lightly browned, stirring frequently.
  • Top crackers with meat, potato mixture and mustard-mayonnaise blend just before serving.

    Substitute 1/2 cup thawed frozen hash browns for the chopped microwaved potatoes.
