Corned Beef Hash Topper Recipe

Ingredients

  • 5 oz. new potatoes
  • 1 Tbsp. butter
  • 1/2 cup slivered onions
  • 1/2 cup chopped green peppers
  • 1/4 tsp. black pepper
  • 24 TRISCUIT Rye with Caraway Seeds Crackers
  • 12 slices corned beef (1/4 lb.), cut in half
  • 1 Tbsp. Dijon mustard-mayonnaise blend

Instructions

  • Microwave  potatoes on HIGH 1-1/2 min. or until slightly softened; cool completely.
  • Chop  potatoes. Melt butter in medium skillet on medium-high heat. Add onions and green peppers; cook and stir 1 to 2 min. or until crisp-tender.
  • Add  potatoes and black pepper; mix lightly. Cook 3 min. or until potatoes are lightly browned, stirring frequently.
  • Top  crackers with meat, potato mixture and mustard-mayonnaise blend just before serving.
