Mexican churros are similar to doughnuts (except for the shape, which is long and narrow) and made with a churrera, a device that pumps the dough into hot fryer oil; the resulting crispy pastries are coated in a cinnamon/sugar mixture. This recipe uses Neufchatel cheese for a rich texture and phyllo dough for a crispy "churro" topping.

Churro Bars Recipe

Ingredients

  • 10 HONEY MAID Honey Grahams, coarsely crushed
  • 3/4 cup plus 2 Tbsp. sugar, divided
  • 1/3 cup butter, melted, divided
  • 1 pkg. (8 oz.) Neufchatel cheese, softened
  • 1 egg
  • 1 tsp. vanilla
  • 1/4 tsp. salt
  • 6 sheets frozen phyllo dough, thawed
  • 1 Tbsp. ground cinnamon

Instructions

  • Heat  oven to 350°F.
  • Combine  graham crumbs, 1/4 cup sugar and 2 Tbsp. butter; press onto bottom of 13x9-inch baking dish sprayed with cooking spray.
  • Beat  Neufchatel, 1/2 cup of the remaining sugar, egg, vanilla and salt with mixer until blended. Drop in spoonfuls over crust; spread to evenly cover crust.
  • Brush  phyllo sheets with remaining butter. Combine remaining sugar and cinnamon; sprinkle over phyllo sheets. Layer phyllo sheets, cinnamon sides up, over dessert.
  • Bake  20 min. or until lightly browned. Cool completely before cutting into bars.
