CHIPS AHOY! Hot Cocoa Cookies

Purchased chocolate chip cookies are topped with a simple chocolate ganache and marshmallows for a quick and yummy cocoa inspired cookie.

  • 24 CHIPS AHOY! Cookies
  • ¼ cup heavy whipping cream
  • 1 pkg. (4 oz.) semi-sweet baking chocolate, chopped
  • 72 miniature marshmallows (about 1 cup)
  • 1 Tbsp. instant hot cocoa mix 
  • Place cookies in single layer on parchment-covered baking sheet.
  • Microwave cream in small microwaveable bowl on HIGH 30 sec. Add chopped chocolate; microwave 30 sec. Let stand 2 min. Stir until chocolate is completely melted and mixture is well blended. Spoon over cookies, adding about 1 tsp. chocolate to each cookie.
  • Top with marshmallows; sprinkle lightly with hot cocoa mix.
  • Refrigerate 10 min. or until melted chocolate is firm.

    Topped cookies can be stored in airtight container in refrigerator for up to 3 days.
  • Variation
    Prepare recipe as directed, substituting 12 halved regular marshmallow for the miniature marshmallows and holiday sprinkles for the instant hot cocoa.
