
Caribbean Coconut-Chicken Bites

Ingredients
- ¼ cup vanilla low-fat yogurt
- ⅛ tsp. Caribbean seasoning
- ⅛ tsp. zest and 1/2 tsp. juice from 1 lime
- 1 avocado
- 36 RITZ Crackers
- ¾ lb. cooked boneless skinless chicken breasts, sliced, cut into 36 pieces
- 2 Tbsp. flaked coconut, toasted
- 1 Tbsp. chopped fresh cilantro
Preparation
- Mix yogurt, Caribbean seasoning, lime zest and lime juice until blended.
- Refrigerate 20 min.
- Cut avocado into 36 slices, then cut each slice crosswise in half. Place on crackers.
- Top with chicken, yogurt mixture, coconut and cilantro.
