Caribbean Coconut-Chicken Bites

ServingsMakes 12 servings, 3 topped crackers each.
  • ¼ cup vanilla low-fat yogurt
  • ⅛ tsp. Caribbean seasoning
  • ⅛ tsp. zest and 1/2 tsp. juice from 1 lime
  • 1 avocado
  • 36 RITZ Crackers
  • ¾ lb. cooked boneless skinless chicken breasts, sliced, cut into 36 pieces
  • 2 Tbsp. flaked coconut, toasted
  • 1 Tbsp. chopped fresh cilantro
  • Mix yogurt, Caribbean seasoning, lime zest and lime juice until blended.
  • Refrigerate 20 min.
  • Cut avocado into 36 slices, then cut each slice crosswise in half. Place on crackers.
  • Top with chicken, yogurt mixture, coconut and cilantro.
