Caribbean Coconut-Chicken Bites Recipe

Ingredients

  • 1/4 cup vanilla low-fat yogurt
  • 1/8 tsp. Caribbean seasoning
  • 1/8 tsp. lime zest
  • 1/2 tsp. fresh lime juice
  • 1 avocado
  • 36 RITZ Crackers
  • 1/2 lb. cooked boneless skinless chicken breasts, thinly sliced, cut into 36 pieces
  • 2 Tbsp. flaked coconut, toasted
  • 1 Tbsp. chopped fresh cilantro

Instructions

  • Mix  first 4 ingredients until blended.
  • Refrigerate  20 min.
  • Cut  avocado into 36 slices, then cut each slice in half.
  • Top  crackers with avocados, chicken, yogurt mixture, coconut and cilantro just before serving.

SubstituteSubstitute fresh parsley for the cilantro.
