
Bit-of-Irish Cheesecake
St. Patrick's Day couldn't be any sweeter when you serve this homemade white chocolate and Irish cream cheesecake dessert. Decorate with a sprinkle of green!

Ingredients
- 10 HONEY MAID Honey Grahams, finely crushed (about 1-1/4 cups crumbs)
- ¼ cup butter, melted
- 3 pkg. (8 oz. each) brick cream cheese, softened
- ¾ cup granulated sugar
- 3 oz. white baking chocolate, melted
- ⅓ cup Irish cream liqueur
- 3 eggs
- 4½ tsp. green colored sugar
Preparation
- Heat oven to 350°F.
- Combine graham crumbs and butter; press onto bottom of 9-inch springform pan.
- Beat cream cheese and granulated sugar in large bowl with mixer until blended. Add chocolate and liqueur; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended; pour over crust.
- Bake 45 to 50 min. or until center is almost set. Run knife around rim of pan to loosen cake; cool completely before removing rim.
- Refrigerate cheesecake 4 hours.
- Sprinkle with colored sugar just before serving.

Combine 1 Tbsp. instant coffee granules and 1/4 tsp. ground cinnamon in small heatproof dish. Add 1/4 cup boiling water; stir until coffee granules and cinnamon are dissolved. Use instead of the liqueur.
