Bit-of-Irish Cheesecake Recipe


  • 1-1/4 cups HONEY MAID Graham Cracker Crumbs
  • 1/4 cup butter, melted
  • 3 pkg. (250 g each) brick cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 oz. white baking chocolate, melted
  • 1/3 cup Irish cream liqueur
  • 3 eggs
  • 4-1/2 tsp. green colored sugar


  • Heat  oven to 350°F.
  • Mix  crumbs and butter; press onto bottom of 9-inch springform pan.
  • Beat  cream cheese and granulated sugar in large bowl with mixer until blended. Add chocolate and liqueur; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended; pour over crust.
  • Bake  45 to 50 min. or until center is almost set. Run knife around rim of pan to loosen cake; cool completely before removing rim. Refrigerate 4 hours.
  • Sprinkle  with colored sugar just before serving.

Fun IdeaTo add a shamrock design, sprinkle the green colored sugar over a clover leaf-shaped stencil placed on top of the chilled cheesecake.

Non-Alcoholic VariationAdd 1/4 cup boiling water to 1 Tbsp. instant coffee granules and 1/4 tsp. ground cinnamon; stir until dissolved. Use instead of the liqueur.
