
Beer-Braised Sausage & Pepper Toppers

Ingredients
- 3 Italian sausage links
- 1 cup light beer, divided
- ⅔ cup slivered sweet onions
- ½ cup EACH green and red pepperstrips
- 1 Tbsp. grainy Dijon mustard
- 3 Muenster cheese slices, each cut into 8 pieces
- 24 RITZ Crackers
Preparation
- Heat oven to 350°F.
- Cook sausage and 1/2 cup beer in large partially covered skillet on medium heat 8 to 10 min. or until beer is cooked off, turning sausage after 5 min. Uncover; cook 3 to 5 min. or until sausage is done and evenly browned. Cool slightly.
- Meanwhile, cook onions, peppers and remaining beer in medium skillet on medium-high heat 5 min. or until vegetables are tender and beer is cooked off, stirring frequently. Remove from heat. Stir in mustard.
- Place crackers in single layer on baking sheet. Cut each sausage link into 8 slices; place on crackers. Top with onion mixture and cheese. Bake 3 min. or until cheese is melted. Sprinkle with parsley.

The sausage and vegetables can be cooked ahead of time. Cool, then refrigerate up to 24 hours. Reheat each (separately) in microwave just until warmed before using as directed. - Variation
