
Bacon-Cheddar Eggwiches

Ingredients
- ¾ cup shredded cheddar cheese
- 4 green onions, sliced
- 3 Tbsp. bacon bits
- 4 eggs
- ½ cup sour cream
- ¼ tsp. chili powder
- 48 RITZ Crackers
Preparation
- Heat oven to 375°F.
- Combine cheese, onions and bacon; spoon into 24 mini muffin pan cups sprayed with cooking spray, adding about 1 Tbsp. cheese mixture to each cup.
- Whisk eggs, sour cream and chili powder until blended; spoon over cheese mixture adding about 1 Tbsp. egg mixture to each cup. Tap pans gently on counter to remove any air bubbles in egg mixture.
- Bake 10 to 12 min. or until centers are almost set. Cool 10 min. before removing egg puffs from cups.
- Place 1 egg puff on each of 24 crackers; top with remaining crackers to make 24 sandwiches. Serve warm.
