Bacon-Cheddar Eggwiches Recipe

Ingredients

  • 3/4 cup shredded cheddar cheese
  • 4 green onions, sliced
  • 3 Tbsp. bacon bits
  • 4 eggs
  • 1/2 cup sour cream
  • 1/4 tsp. chili powder
  • 48 RITZ Bacon Flavored Crackers

Instructions

  • Heat  oven to 375°F.
  • Combine  cheese, onions and bacon; spoon into 24 mini muffin pan cups sprayed with cooking spray, adding about 1 Tbsp. cheese mixture to each cup.
  • Whisk  eggs, sour cream and chili powder until blended; spoon over cheese mixture adding about 1 Tbsp. egg mixture to each cup. Tap pans gently on counter to remove any air bubbles in egg mixture.
  • Bake  10 to 12 min. or until centers are almost set. Cool 10 min. before removing egg puffs from cups.
  • Place  1 egg puff on each of 24 crackers; top with remaining crackers to make 24 sandwiches. Serve warm.

SubstitutePrepare using your favorite variety of shredded cheese, such as pepper Jack, Colby Jack or a Mexican-style blend.
