Avocado, Coconut & Chicken Topper

Bring a taste of the islands to your next party with these appetizers that top grilled chicken and avocado with cilantro mayo and toasted coconut.

ServingsMakes 6 servings, 4 topped crackers each.
  • 2 Tbsp. mayonnaise
  • ¾ tsp. chopped fresh cilantro
  • ½ tsp. lime juice
  • ½ avocado
  • 24 RITZ Crackers
  • 3 chicken tenders (6 oz.), grilled, each cut into 8 slices
  • 2 Tbsp. sweetened flaked coconut, toasted
  • Mix first 3 ingredients until blended.
  • Cut avocado piece lengthwise in half, then cut each half crosswise into 12 slices.
  • Top crackers with avocados, chicken, mayonnaise mixture and coconut.

  • How to Toast the Coconut
    Toasting coconut is easy. Just spread coconut evenly onto bottom of shallow baking pan. Bake in 350°F oven 7 to 10 min. or until coconut is lightly browned, stirring frequently. Or, spread coconut onto bottom of microwaveable pie plate. Microwave on HIGH 3 min. or until coconut is lightly browned, stirring every minute. Watch carefully as coconut can easily burn!
