
Avocado, Coconut & Chicken Topper

Ingredients
- 2 Tbsp. mayonnaise
- ¾ tsp. chopped fresh cilantro
- ½ tsp. lime juice
- ½ avocado
- 24 RITZ Crackers
- 3 chicken tenders (6 oz.), grilled, each cut into 8 slices
- 2 Tbsp. sweetened flaked coconut, toasted
Preparation
- Mix first 3 ingredients until blended.
- Cut avocado piece lengthwise in half, then cut each half crosswise into 12 slices.
- Top crackers with avocados, chicken, mayonnaise mixture and coconut.

- How to Toast the Coconut
Toasting coconut is easy. Just spread coconut evenly onto bottom of shallow baking pan. Bake in 350°F oven 7 to 10 min. or until coconut is lightly browned, stirring frequently. Or, spread coconut onto bottom of microwaveable pie plate. Microwave on HIGH 3 min. or until coconut is lightly browned, stirring every minute. Watch carefully as coconut can easily burn!
