Vietnamese Chicken Salad Recipe

Ingredients

  • 1/4 cup lite soy sauce
  • 4 tsp. brown sugar
  • 1 tsp. grated fresh garlic
  • 1/2 tsp. grated gingerroot
  •  zest from 1 lime
  • 2 grilled boneless skinless chicken breast halves (3/4 lb.), chopped
  • 2 Tbsp. mayonnaise
  • 1 Tbsp. chopped fresh cilantro
  • 48 TRISCUIT Crackers

Instructions

  • Bring  first 5 ingredients to boil in small saucepan on medium heat; cook 1 min.
  • Place  chicken in medium bowl. Add soy sauce mixture, mayonnaise and cilantro; mix lightly.
  • Spoon  onto crackers just before serving.

Recipe Tips

SubstituteSubstitute fresh parsley for the cilantro.

SubstitutePrepare using TRISCUIT Roasted Garlic Crackers.

Special ExtraGarnish with fresh cilantro sprigs, if desired.
