Roasted Tomato & Goat Cheese Puffs Recipe

Ingredients

  • 12 grape tomatoes, halved
  • 1 Tbsp. olive oil
  • 30 TRISCUIT Cracked Pepper & Olive Oil Crackers, divided
  • 2 Tbsp. chopped fresh parsley
  • 1 log goat cheese (4 oz.)

Instructions

  • Heat  oven to 375ºF.
  • Toss  tomatoes with oil; spread onto baking sheet. Bake 30 min. or until lightly browned. Meanwhile, finely crush 6 crackers; mix with parsley. Place remaining crackers on baking sheet.
  • Cut  cheese into 12 slices, then cut each slice in half. Roll each into ball; flatten into round. Coat evenly with cracker crumbs; place on crackers. Top with tomatoes.
  • Bake  10 min. or until heated through.

Recipe Tips

NoteFor best results, freeze cheese 20 min. before slicing and rolling into balls as directed.

SubstitutePrepare using 4 oz. brick cream cheese.
