Refreshing Lemon Tart Recipe

Ingredients

  • 6 Tbsp. butter, divided
  • 1 cups finely crushed NILLA Wafers (about 45)
  • 1/4 cup sugar
  • 2 Tbsp. cornstarch
  • 2-1/4 cups water
  • 2 pkg.  (4-serving size each) JELL-O Lemon Flavor Gelatin
  •  Grated peel and juice from 1 large lemon
  • 1 cup  thawed COOL WHIP Whipped Topping

Instructions

  • Preheat  oven to 350ºF. Melt 4 Tbsp. of the butter; mix with wafer crumbs. Press onto bottom and up side of 9-inch tart pan. Bake 10 min. Cool.
  • Meanwhile,  mix sugar and cornstarch in medium saucepan. Gradually add water, stirring with wire whisk until well blended. Bring to boil on medium heat. Cook 8 min., stirring constantly. Remove from heat. Add dry gelatin mixes, lemon zest and juice; stir until gelatin is completely dissolved. Add remaining 2 Tbsp. butter; stir until melted. Refrigerate 30 min. or until slightly thickened, stirring occasionally. Pour into crust. Refrigerate 3 hours or until set.
  • Serve  topped with the whipped topping. Store leftovers in refrigerator.
