Island Black Bean Hummus Topper Recipe

Ingredients

  • 1 Tbsp. olive oil
  • 1 cup chopped red onions
  • 1 jalapeño pepper, seeded, finely chopped
  • 1 can (15 oz.) black beans, rinsed
  • 1/4 cup cilantro
  • 1 tsp. lime zest
  • 2 Tbsp. fresh lime juice
  • 1/2 tsp. hot pepper sauce
  • 72 RITZ Crackers
  • 1/2 cup sour cream
  • 1/2 cup finely chopped red peppers
  • 1/2 cup finely chopped avocadoss

Instructions

  • Heat  oil in small skillet on medium heat. Add onions and jalapenos; cook and stir 5 min. or until crisp-tender. Cool slightly.
  • Transfer  onion mixture to blender. Add next 5 ingredients; blend until smooth.
  • Top  crackers with bean mixture, sour cream, red peppers and avocados. Serve immediately.

Recipe Tips

Variation For a change of pace, spread bean mixture into 9-inch circle on platter; cover wtih sour cream, leaving border at edge. Top with red peppers and avocados. Surround with crackers.
