Grilled Salmon & Spinach Topper Recipe

Ingredients

  • 1 tsp. olive oil
  • 1-1/2 cups baby spinach leaves
  • 1 clove garlic, minced
  • 6 TRISCUIT Dill & Olive Oil Crackers
  • 1 oz. grilled skinless salmon fillet, cut into 6 pieces
  • 6 sprigs fresh dill

Instructions

  • Heat  oil in small skillet on medium heat. Add spinach and garlic; cook 3 to 4 min. or until spinach is wilted, stirring frequently. Drain well.
  • Top  crackers with spinach, salmon and dill.
  • Serve  immediately.

Recipe Tips

Spice it upAdd a pinch of ground red pepper (cayenne) to the spinach and garlic before cooking as directed.
