Cheesy Bacon & Beer Dip Recipe

Ingredients

  • 3 slices applewood smoked bacon, diced
  • 1 clove garlic, minced
  • 1 small onion, finely diced (about 1/2 cup)
  •  kosher salt, to taste
  • 1 bottle (12 oz.) lager-style beer
  • 1 pkg. (8 oz.) shredded cheddar cheese
  • 2 Tbsp. all-purpose flour
  • 1 tsp. dry mustard
  •  pinch of crushed red pepper flakes
  •  dash of Worcestershire sauce
  • 4 oz. (1/2 of 8-oz. pkg.) cream cheese, cut into cubes
  • 3 Tbsp. ranch dressing
  • 2 green onions, sliced

Instructions

  • Set  a heavy-based saucepan over medium heat. Add bacon and saute for 7 min. until golden and crispy. Remove with a slotted spoon and set aside. Add garlic and onion to pan with bacon fat and saute for 5 min. until well caramelized. Season with salt. Add beer and bring to a boil. Simmer for 5 min. to allow beer to reduce slightly.
  • In  a large bowl, toss cheese with flour, mustard and pepper flakes. While stirring gently, add cheese to the saucepan. Add Worcestershire and continue to cook until cheese has melted. Fold in cream cheese and cook just until melted. Pour into bowl and swirl in ranch dressing. Top with green onions and reserved bacon bits.
  • Serve  warm with WHEAT THINS Big Snacks.
