This classic Sicilian eggplant relish of onions, tomatoes, red peppers, garlic and Italian seasoning is served as a savory appetizer with crackers.

Caponata Recipe


  • 1 small eggplant, peeled, finely chopped (about 3 cups)
  • 1/2 cup finely chopped onions
  • 1 clove garlic, minced
  • 2 Tbsp. olive oil
  • 1/2 cup finely chopped red peppers
  • 1/2 cup finely chopped tomatoes
  • 1 tsp. Italian seasoning


  • Cook  eggplant, onions and garlic in hot oil in large skillet on medium-high heat 5 min. or until vegetables are tender, stirring occasionally.
  • Add  peppers, tomatoes and seasoning; stir. Cover. Reduce heat to medium-low; cook 10 min. or until peppers are tender, stirring occasionally. Transfer to serving bowl; cover.
  • Refrigerate  several hours or overnight. Top each cracker with a generous tablespoon of the vegetable relish just before serving.

Recipe Tips

SubstituteSubstitute green peppers for the red peppers.

How to Easily Chop OnionsCut a whole peeled onion into thin slices, about 1/4 inch thick. Stack 2 or 3 slices. Make several crosswise cuts in both directions down through onion slices. Or, with whole peeled onion facing up, make several crosswise cuts in both directions partially through the onion. (Be carefully to not cut through to bottom of onion.) Turn onion so that cut end faces out to the side. Cut crosswise into slices.
